
Oh so moist because of a few non-traditional ingredients, dive into this recipe and enjoy every luscious bite. Predominately sweetened with honey, this is a perfect way to get in an oatmeal breakfast, snack, or dessert. I used organic and non-GMO ingredients in my recipe, you can choose regular ingredients to save money. An important step is to mix the glycerin and gums thoroughly before incorporating into the pineapple juice to avoid sticky lumps. If your local store doesn’t carry these ingredients order them online. This recipe really cuts the fat while giving you a smooth moist bar. If desired, you can glaze cake with a thin mixture of pineapple juice mixed with powdered sugar spread on slightly warm cake or just a dusting of powdered sugar after the cake has cooled. Any way you choose they are totally “cravable”!
The Fat Free Gourmet’s Oatmeal Carrot Bars
2 cups grated carrots (if you use a food processer to grate give them a second chop through with a knife for smaller shreds of carrot)
¾ cup vanilla flavored non-fat Greek yogurt
½ cup honey
½ cup egg substitute
2 teaspoons food grade vegetable glycerin
½ teaspoon non-GMO xanthan gum
½ teaspoon natural guar gum
½ cup crushed canned pineapple with juice
1 1/2 cups oat Flour
1 cup quick oats
2 teaspoon cinnamon
1/4 teaspoon cloves
1 teaspoon baking powder
1 teaspoon baking soda
1) Preheat oven to 350°.
2) Spray a 9×13 inch glass baking dish with cooking spray, set aside.
3) Combine first four ingredients in a bowl. In a separate small bowl combine vegetable glycerin with xanthan and guar gums then mix in pineapple until smooth and no lumps are visible. Add pineapple mixture to carrot mixture and blend until incorporated.
4) Mix together dry ingredients in mixing bowl. Add wet ingredients blending until batter is evenly mixed. Pour into prepared baking dish.
5) Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean. Serves 12.
